Heat olive oil in a saucepan over medium heat, add shallots, garlic and thyme and cook for 5 minutes or until golden.
Add cider, bring to the simmer, add mussels, increase heat to high, cover and cook for 5 minutes, shaking pan occasionally, until mussels open.
Add NESTLÉ CARNATION Lite Cooking Cream bring to the boil , reduce heat and simmer for 15 minutes or until cream has reduced, stir until mussels are well coated, and if desired serve hot with crusty sourdough bread and a large green salad.
