  1. heat oil in a large saucepan over medium low heat. add onion, cook for 2 – 3 minutes or until soft but not brown.
  2. add potatoes and cook 3 – 4 minutes.
  3. add chicken stock, MAGGI original seasoning, corn kernels and creamed corn; bring to the boil; simmer until potatoes are tender.
  4. serve chowder topped chopped parsley if desired.
