Preheat oven to 180°c/160°c fan forced. Line a 28cm x 18cm lamington pan with baking paper.
Combine NESCAFÉ Blend 43, flour, sugar, coconut and butter; mix well to combine. Press together to form a ball, wrap in plastic wrap and place in the freezer until required.
Beat butter and sugar together until light and creamy; add egg, beat well. Fold in sifted flours and cinnamon and milk. Spread mixture into prepared pan and top with apricots and ginger.
Using the large side of a grater, grate streusel topping over slice. Bake 30 minutes or until golden and cooked. Cool in the pan before cutting into slices.
