Combine flour, bicarbonate soda, sugar and shredded coconut in a bowl.
In a separate bowl, combine CARNATION Light & Creamy Coconut Flavoured Evaporated Milk and egg. Stir into flour mixture.
Heat a pan, lightly spray with oil. Pour ¼ cup batter into pan. Cook 2 minutes over low heat or until bubbles form on the surface, turn and cook for a further 1 to 2 minutes or until cooked thought.
Tip – serve with mixed berries, ricotta and honey, if desired.
