Combine beef, garlic, parsley salt and pepper in a large bowl. Divide into 4 even portions and shape into round patties. Drizzle oil over mushrooms.
Heat large frying pan or griddle, add patties and mushrooms, cook for 3 - 4 minutes each side or until patties are brown and cooked through.
Assemble the stack, starting with the mushrooms as the base and then building up with patty, tomato, beetroot and baby spinach. Serve immediately.
