  1. preheat oven to 180ºc/160ºc fan forced. grease and line a 20 x 10 cm loaf pan.
  2. combine flour, sugar, coconut and dates in a large bowl. pour over combined eggs and CARNATION light & creamy cooking milk and banana. mix well; pour into prepared pan. bake 45 minutes or until an inserted skewer comes out clean.
  3. combine ricotta and honey. set aside. melt margarine in a frying pan over medium heat; add bananas and sugar, cook 1-2 minutes per side or until golden.
  4. slice 4 pieces of bread. toast. serve with ricotta and bananas.
