  1. preheat oven to 160°c/140°c fan forced. line 2 baking trays with non stick baking paper.
  2. combine margarine and golden syrup in a medium saucepan. stir over low heat until margarine has melted; remove from heat; transfer to a medium bowl; cool.
  3. disolve bicarbonate of soda in water. add to butter mixture, with UNCLE toby's traditional oats, flour, sugar, coconut and apricots; mix well.
  4. take level tablespoons of the mixture and roll into balls; place on trays 5cm apart; flatten slightly.bake for 15-20mins or until golden brown, cool on trays.
