  1. cook pasta according to packet instructions. drain and keep warm.
  2. meanwhile, steam or microwave pumpkin until tender. set aside.
  3. spray a medium saucepan with oil and heat on medium. cook onion for 2–3 minutes or until soft and lightly golden. add pumpkin, mash until pumpkin is smooth, gradually adding CARNATION light & creamy cooking milk; bring to boil. add pasta, cook just until heated through.
  4. meanwhile, heat a frying pan over medium-high heat; spray with oil; stirfry capsicum, tomato and carrot for 3 minutes or until tender-crisp.
  5. divide pasta between 6 bowls; top with vegetables, parsley and pine nuts.
