preheat oven to 180°c/160°c fan forced. grease a 6 cup (1.5l) ovenproof dish.

combine flour and 1/4 cup (55g) of caster sugar in a bowl. add egg, butter, milk and lemon zest; beat to combine. pour into prepared dish.

combine cornflour, custard powder and the remaining caster sugar and sprinkle over top of pudding.

combine lemon juice with 1 1/2 cups (375ml) boiling water and pour over pudding. bake for 30-40 minutes or until puffed and golden.
