  1. cook rice according to packet directions; drain.
  2. meanwhile, heat a medium frying pan over medium heat; spray with oil; add onion and cook for 2 minutes or until just soft.
  3. add mince, garlic and ginger; cook for 5 minutes or until browned, breaking up any lumps with a wooden spoon.
  4. add capsicum and cook further 3 minutes, stirring frequently.
  5. add MAGGI authentic fish sauce and MAGGI sweet chilli sauce, stir in coriander.
  6. to serve, divide the rice among lettuce leaves, top with chicken mixture and roll up to eat with your fingers.
