METHOD

Step 1Preheat the oven to 200 ºC. Place the sweet potatoes peeled and cut into wedges on a baking tray, drizzle with olive oil and season with salt, pepper and finely cracked fennel seeds. Roast for about 15 minutes.

Step 2Blanch the beans for 1 minute. Rinse them under cold water and remove them again (squeeze the green bean out of the broad bean shell). Cut the red cabbage into thin strips and season with salt, pepper and lemon juice.

Step 3Rinse the quinoa and boil in 200ml of water until the water disappears.

Step 4Stir fry the chickpeas in a little oil for about 4 minutes.

Step 5Cook the Harvest Gourmet Sensational™ Burgers in a frying pan according to the instructions on the package.

Step 6Dice the tomatoes. Divide the quinoa and spread over the bowls. Add the sweet potato, red cabbage, chickpeas, beans and a generous spoonful of hummus. Cut the burgers into strips and put them on top. Garnish with pomegranate seeds and lemon.
