METHOD

preheat oven to 180°c/160°c fan forced. grease and line a 20cm round cake pan with baking paper.

combine dates and water in a medium saucepan; bring to boil, simmer until thick and pulpy (about two minutes). remove from heat, stir in bicarbonate of soda and sultanas, cool.

beat butter and sugar until light and creamy, add ½ cup (125ml) NESTLÉ sweetened condensed milk, eggs and vanilla, beat until smooth and creamy. gently fold in dates and flour.

spoon mixture into prepared pan. bake 50 minutes or until skewer inserted comes out clean.

place extra butter, brown sugar and remaining NESTLÉ sweetened condensed milk in a medium saucepan over medium heat. bring to boil, reduce heat and simmer while stirring for 5 minutes, or until thick and creamy. add cream, simmer for a further 2 minutes. serve pudding with sauce.
