  1. cook rice according to packet directions. drain; set aside.
  2. score the inside of the calamari with a sharp knife, then cut into small squares.
  3. spray a wok or large frying pan with oil; place over a high heat. cook prawns for 1 minute, add fish, scallops and calamari; cook another 2 minutes; remove and keep warm.
  4. reheat wok over medium heat; spray with oil; stir fry garlic, chilli, capsicum and green onions for 2-3 minutes. add MAGGI oyster sauce, MAGGI authentic thai fish sauce and water; bring to the boil. return seafood to pan with the basil; toss to heat through. serve with rice.
