Baked Ricotta Citrus Cake

Recipe Ingredients

(Serves 8)

  • 3/4 cup (190mL) NESTLÉ Sweetened Condensed Milk
  • 250g ricotta cheese
  • 1 tsp each grated lemon, lime and orange zest
  • 1 tbsp each lemon, lime and orange juice
  • 3 eggs, separated
  • 1/4 cup (35g) plain flour

How to make

1. Preheat oven to 180°C/160°C fan forced. Grease and line a 20cm deep round cake pan with baking paper.

2. Place NESTLÉ Sweetened Condensed Milk, cheese, zest, juice, egg yolks and flour in a large bowl. Beat with an electric mixer until combined.

3. In another bowl, beat egg whites until stiff peaks form; gently fold into cheese mixture using a metal spoon. Pour into prepared pan; bake 40-45 minutes until firm.

5. Remove from pan, dust with icing sugar if desired; serve warm or cool.
